Distribution of taste receptor cells in the tongue. Taste receptor cells detect: sweet (sucrose), sour (HCl), salty (NaCl), bitter (quinine) and umami (water) flavors, as indicated by the illustration. Taste receptor cells reside in taste buds that are found in the tongue’s papillae. 3 cranial nerves, identified on the diagram, mediate taste.
